Here’s a recipe we love to break out when we have friends to stay. ‘Mom’s Pancakes’ is fondly named after a friend’s mother (particularly talented in the baking department) who created the recipe by ‘veganizing' one of her favorites. One of our favorite ways to prepare tofu is as an omelette or a scramble. It’s good for breakfast, lunch or dinner, and you can make so many variations that the possibilities are plentiful.
